Zia Graziella

Still the same day we went to Viterbo, we had dinner at Zia (Aunt) Graziella's. It is a pizzeria, recommend to us by Svedonio, who is in Bartender with David. It's different from a typical pizzeria, in that it's at Gratziella's house, in the countryside of Orvieto. She cooks everything in a wood oven, and has 80 year old mother yeast which she makes the pizza from. There is no menu, but that is fine, everything she brings is wonderful! You start off with a plate of assorted antipasto, then 4 different types of pizza, and of course nutella pizza for dessert. The pizza crust is very thin and light, she doesn't use any oil to cook, but the toppings are very filling.

It was a fabulous dinner, and we have been telling everyone about it since. Graziella is a sweet, and very funny lady.  She started one of the fresh pasta companies in town over 35 years ago, has cooked for Martin Scorsese and Richard Gere, and was written about in the New York Times.
